Our Story

An Ecuadorian tradition that found its home in Toronto

It all began with a scent.

A golden, warm aroma rising from a tiny kitchen in the heart of Toronto. It wasn’t just the smell of green plantains roasting or pork crackling in the pan — it was a living memory. A memory of distant lands, of family tables filled with laughter, and of loving hands shaping each bolón like a sacred gift.

The bolón — crispy on the outside, soft and comforting inside — has long been a symbol of community, heritage, and resilience in Ecuador. Served at dawn or dusk, it brings people together to celebrate what truly matters: being present, being together.

That essence is what Bolonary brings today to homes across Toronto.

What started as a yearning to recreate a childhood flavor has become a promise: to deliver the warmth of an ancestral culture into the heart of a fast-paced city. But this isn’t just food. It’s memory wrapped in kraft paper, it’s warmth in a minimalist box, it’s the silent hug of a grandmother, a father, a child…

Because we believe that food can shift a day — and a perfectly made bolón can bring the distant near: the urban with the ancestral, the fast with the meaningful, the individual with the collective.

Today, our bolones are crafted with premium ingredients, thoughtfully styled, and delivered with care. Each one carries a piece of history — a flavor that needs no translation.

From that first bolón shared on a cold downtown balcony, to now reaching the doorsteps of diverse families across the city…

(Before the 16th Century)

Pre-Colonial Origins

Along Ecuador’s coast, Indigenous peoples like the Huancavilcas used green plantains as a staple food. They roasted, mashed, and shaped them into energy-rich meals — perfect for long workdays or travel.

(16th–17th Century)

Spanish Influence

With Spanish colonization came new ingredients: pork, cheese, and frying techniques. Plantain was transformed — mashed and filled, creating the earliest versions of what would become the bolón.

(19th–20th Century)

The People’s Meal

In cities like Guayaquil and towns across Esmeraldas and Manabí, the bolón became a cultural staple. It was breakfast, snack, or dinner — shared in homes and street stalls. Crispy, salty, nourishing, and comforting — it became the taste of family and resilience.

(1980s–2000s)

Migration & Memory

As Ecuadorians emigrated around the world, the bolón became a memory preserved in kitchens far from home. Whether made in Queens, Madrid, or Toronto, it remained more than food — it was a reminder of origin, warmth, and belonging.

(2023–Present)
