Along Ecuador’s coast, Indigenous peoples like the Huancavilcas used green plantains as a staple food. They roasted, mashed, and shaped them into energy-rich meals — perfect for long workdays or travel.
With Spanish colonization came new ingredients: pork, cheese, and frying techniques. Plantain was transformed — mashed and filled, creating the earliest versions of what would become the bolón.
In cities like Guayaquil and towns across Esmeraldas and Manabí, the bolón became a cultural staple. It was breakfast, snack, or dinner — shared in homes and street stalls. Crispy, salty, nourishing, and comforting — it became the taste of family and resilience.
